This is a quick way to prepare chickpeas with lots of flavor. Put them in a bowl with rice and vegetables and you have a very quick meal. Why pay for takeout when you can throw together a meal in 15 minutes?
Inspired by the Divine Hostess's Kale Avocado Grapefruit Salad:
5 Minute Chickpeas
2 cans chickpeas, drained & rinsed
1 tablespoon of Emeril's Essence or other all purpose seasoning blend
2 teaspoons oil
Heat a pan over medium-high heat.
Add the oil, then the chickpeas and seasoning blend.
Saute for 3 minutes, stirring frequently to make sure the chickpeas don't stick and that they are evenly coated.

Yield: 2/3 cup
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme
